Chili is the most argued-about dish in America, and I love that about it. Beans or no beans. Ground or chunked. Powder or whole dried chiles. Down here in Texas, the no-bean rule is treated as settled law, and I have watched otherwise reasonable people get genuinely heated about it at a cookoff. So here are six pots covering every side of the argument β€” make whichever one you'll defend.

The homemade version lets you control the heat instead of deciding whether to hold back the little red packet. Deep, dark, and beefy, with real chile flavor underneath the heat rather than just a burn.

​La Cocina Chili Colorado con Carne β€” Chunks of beef braised slowly in a sauce made from rehydrated dried red chiles β€” no powder, no beans, no ground meat. It's smoky, a little sweet, and completely different from anything else on this list.
